BBQ Tofu Toastie with caramelised onion

Makes: 2 Toasties
Prep time: 30 minutes
Cook time: 10 minutes
Ingredients:
1/2 block of firm tofu
4 slices of sourdough bread
1/4 cup of bbq sauce
2 tbsp of maple syrup
1/2 red onion
Vegan cheese
Vegan butter
Pickles
Optional Garnish:
Sriracha hot sauce
Black sesame seeds
Fresh basil
Directions:
Slice (1 block) of tofu in half length ways and place one half in an air tight container. (if you are making more than 2 toasties use the other half of tofu for this recipe).
Press tofu for 30-1 hour. Slice the half in half again, lengthwise. Transfer the tofu to a large plate and coat with bbq sauce and maple syrup. Use a baking brush or back of a spoon to evenly coat both sides of tofu with the sauce.
Meanwhile, slice onion and heat a small pan over medium-high heat with 1 tbsp of olive oil. Once hot, add onion and sauté until caramelised - about 7-8 minutes. Set aside.
To a large non stick pan over medium-high heat, add tofu. Cook on both sides until sauce is sticky and tofu has browned on both sides. (About 7-8 minutes) Once tofu is ready, set it aside and wash and dry the same pan.
Place the pan back over medium heat. Meanwhile, spread butter over both sides of each piece of bread. Assemble your toastie by adding caramelised onion to the bottom slice, a few slices of cheese, a few pickles, one piece of tofu and any optional garnish (i have listed above). Close both sandwiches with the top piece and transfer to the hot pan. Cook on both sides for 2-3 minutes or until slightly browned. Serve hot and enjoy!
