I can honestly say i have a weak spot for anything "satay". So when i was brainstorming some quick & easy 15 minute meals, satay noodles were on the top of my list. The meal really only requires some quick chopping and grating, mixing together the sauce ingredients and throwing it all together with some tasty noodles.

I think most people love a good noodle dish, but when you can really simplify it at home and make the sauce on your own (rather then store bought which can be filled with preservatives) you really can't get much better.

Lots of people give in to the pre-made sauces they sell at the supermarket but once you start to experiment creating sauces on your own, you'll never turn back. And what i love about this meal is that it really is so simple and will have you feeling like you've ordered it straight from a Thai restaurant - realising you never have to spend money out when you just feel like a simple noodle dish to satisfy your asian cravings.

Prep time: 5 minutes

Cook time: 10 minutes

Serves: 3 people

Ingredients:

  • 1/2 cup of mushrooms

  • 3/4 cup of green beans

  • 1 large carrot, thinly sliced or grated into large chunks

  • 1 medium white onion, diced

  • 3 cloves of garlic, minced

  • 1 tbsp of coconut oil

  • 1 packet of rice noodles (or any noodle of choice)

  • 3 tbsp of peanut butter

  • 1/2 lime juice (save the other half for garnish)

  • 1 tsp of soy sauce

  • 165ml of coconut milk

  • 1 tbsp of curry powder

  • 1 tsp of agave syrup (or maple syrup)

  • 1 tbsp of sesame seeds for garnish

  • Desired amount of chilli flakes for garnish

Directions:

  1. Prepare all vegetables by chopping and setting aside.

  2. Dice onion & mince garlic.

  3. On a non stick pan add coconut oil on medium heat. Once the oil is hot add onion & garlic and saute until the onion is translucent.

  4. Add in mushrooms and cook for 1 minute. Then add in green beans and carrot.

  5. Meanwhile, add the dried noodles to a bowl and cover with boiling water. Let stand for 5 minutes or until softened. Drain and let the noodles cool down.

  6. Prepare satay sauce by adding peanut butter, coconut milk, lime, soy sauce, curry powder, agave syrup to a bowl. Mix until it becomes a saucy texture and add to the vegetables.

  7. Cook for 1 more minute - then remove from heat and add noodles to the pan. Mix noodles, sauce and vegetables together.

  8. Serve and garnish with sesame seeds, lime and chilli flakes.
