Homemade Seed Crackers

Ingredients:
1/2 cup of chia
1/2 cup of flax
3 tbsp of black sesame
1 cup of pumpkin seeds
1 cup of sunflower seeds
1 1/4 cups of water
1/4 tsp of salt
1/4 tsp of curry powder
1/4 tsp of cinnamon
1/4 tsp of dried oregano
1/4 tsp of dried thyme
Directions:
To a medium sized mixing bowl, add chia seeds, flax seeds and water. Set aside for 30 minutes. (The seeds will soak up the water and expand during this time).
Meanwhile, add the pumpkin and sunflower seeds to a food processor and blitz a few times. You don’t want to blitz them too much, just enough so they are still crunchy and a bit broken apart.
Line a baking tray with parchment paper and pre heat the oven to 150 degrees C.
Once the chia/flax seeds have been sitting fo 30 minutes, add in the pumpkin/sunflower seeds and mix together. Add in all herbs and spices and mix.
Transfer the mixture to the lined baking tray and finish off by sprinkling the black sesame seeds on top. Flatten them down into the mix and spread it all around the tray creating a thin & flat rectangle shape.
Bake for 45-50 minutes. Once they are ready, let them cool for 5-10 minutes and then slice them into squares. Enjoy them with your favourite dip or even some sauerkraut & chilli flakes for some spice.
