Simple Cinnamon Vegan Pancakes

Simple Cinnamon Pancakes
Makes: 7 Medium Sized Pancakes
Prep time: 5-7 minutes
Cook time: 10-15 minutes
Ingredients:
1 cup of whole wheat flour (or regular)
2 tbsp of maple syrup (+ extra for garnish)
1 cup of oat milk
1 tsp of cinnamon
1 tbsp of brown sugar
1 tbsp of baking powder
1/2 tsp of vanilla powder/essence (optional)
1/4 tsp of salt
Optional Add ins:
Blueberries (fresh or frozen), to mix into the batter or to have fresh on top
Banana, sliced (same as above)
Hemp seeds, for garnish
Cinnamon, to sprinkle on top
Directions:
To a large mixing bowl, add in the flour, baking powder, brown sugar, cinnamon, vanilla and salt. Sift together with a fork.
Add in the oat milk and maple syrup and stir until mixture is formed. Option to add in any extra’s here (I added in some frozen blueberries).
Let the mixture sit for 5 minutes. Then heat up a non stick pan. Option to add 1 tbsp of oil (either coconut, olive or vegan butter) If you like, however it is not needed with a non stick.
Once hot add in 2 tbsp of mixture to one side of the pan, and the same on the other side. Once the top of the pancake starts to show a few bubbles, flip and cook for another minute on the other side. Repeat with the rest of the mixture.
Serve hot with fresh fruit, maple syrup and a sprinkle of cinnamon.
