Updated: Apr 24, 2020

Serves: 6-8 people
Prep time: 30-35 minutes
Cook time: 15 minutes
Ingredients:
For patties:
6x burger buns
4 small sweet potato’s (or 2 large)
1 cup of quinoa
2 tbsp of all purpose flour
1 can of black beans
1 small red onion (or 1/2 large), diced
1 tsp of curry powder
1 tsp of dried coriander
1 tsp of cumin
1 tsp of chilli powder
For toppings:
Avocado
Sprouts
Lettuce
Cucumber
Pickles
Sriracha hot sauce
(Or anything else you may want)
Directions:
Preheat oven to 200 degrees C. Line tray with baking paper and cut sweet potato’s in half. Place them facing down on the tray and bake for 30-35 minutes or until you can pierce them with a fork.
Meanwhile, add 1 cup of quinoa to a saucepan with 2 cups of water. Bring to a boil and then reduce to low, allow to simmer until all the water is absorbed.
Once the sweet potato’s are ready, remove from oven and allow to cool for 5 minutes. Then remove skin, scoop out flesh and add to a large mixing bowl.
Mash the sweet potato well and then add in the black beans and roughly mash them. (I don’t like to mash the black beans completely to give the patties some texture)
Once the quinoa is cooked, remove from heat and add mix it in with the sweet potato & black bean mix.
Add in all of the spices, salt and pepper. Using your hands, roll mixture into balls and place on top of some baking paper.
Add 1 tsp of coconut oil to a non stick pan and cook patties, flipping once every 5 minutes so that they don’t burn.
Meanwhile, place burger buns into the oven for 5 minutes to heat up - Or lightly pan fry them.
Assemble your burger, add some hot sauce for spice and enjoy.
