  • 1 cup of uncooked quinoa

  • 2 cups of water

  • 2 tbsp of teriyaki sauce

  • 1 tbsp of coconut oil

  • 1 tsp of sesame oil

  • 1 knob of ginger, minced

  • 1 tsp of sesame seeds

Optional garnish:

  • Lime

  • Spinach (or any leafy greens)

Directions:

  1. Rinse 1 cup of quinoa well for about 30 seconds.

  2. Place quinoa in a saucepan on high heat with 2 cups of water.

  3. Bring to a boil, and then reduce to a gentle simmer until water has been absorbed.

  4. Remove the pot from the heat and cover with a lid, which will allow the quinoa to become fluffy and light. Drizzle some olive oil and salt and set aside.

  5. Meanwhile, Mince ginger and prepare tofu by slicing it into desired shape and size.

  6. Add 1 tbsp of coconut oil to a non stick pan and add in ginger and tofu. Cook well on both sides (5-10) minutes on low-medium heat and then pour in teriyaki and sesame oil.

  7. Once tofu is crispy, remove from heat and serve with Quinoa and some fresh greens.
