Prep time: 3-5 minutes

Cook time: 10-15 minutes

Serves: 3-4

Ingredients:

  • 1 can of Fava Beans

  • 1 can of Butter Beans

  • 2 cloves of Garlic, minced

  • 1 Lemon, juice

  • 1 red Chilli, minced

  • 1/2 tsp of cumin

  • 1/2 tsp of cayenne pepper

  • 1/4 cup of chopped parsley

  • 4 large cherry tomatoes, halved or 1 tomato, diced

  • 1 pinch of Salt

  • Extra virgin olive oil

To serve: (OPTIONAL)

  • Pita bread, warmed

  • Spring onion

  • Radish

Directions:

  1. In a pan, add 1 can of fava beans and the brine from the can. Drain the butter beans and add them to the pan next. Cook beans for around 10 minutes on medium heat.

  2. To a small bowl add minced garlic, chilli, lemon juice, paprika and cayenne pepper. Mix together and then add to the pan.

  3. Using a potato masher, mash the beans. I like to leave some beans un mashed to create more texture in the mix however if you prefer you can mash them completely.

  4. Add a generous amount of olive oil and remove from the heat. Top with tomato, parsley and serve with fresh pita bread, spring onion and some slices of radish.

Notes: This can be eaten for breakfast, lunch or even a snack. Commonly eaten like a dip however many people enjoy foul without bread as a simple and nourishing snack.
