Onion & Corn Bahjis

Prep time: 10 minutes

Cook time: 10-15 minutes

Makes: 6 Bahjis

Ingredients:

  • 2 onions, sliced

  • 1/2 can of sweet corn

  • 3/4 cup of chickpea flour

  • 1/2 tsp of coriander (ground)

  • 1/2 tsp of paprika

  • 1/2 tsp of garam masala

  • 1/2 tsp of curry powder

  • 1/2 tsp of garlic powder

  • 1/4 tsp of tumeric powder

  • 1/2 cup of water

Green sauce:

  • 1/2 cup of packed parsley

  • 1/2 cup of packed coriander

  • 2 garlic cloves

  • 1 knob of ginger

  • 2 tbsp of yoghurt

  • 1 lemon, juice

  • 1 tbsp of brown sugar

  • 1 red chilli

Directions:

  1. Begin by thinly slicing the onions into rings.

  2. To a mixing bowl add chickpea flour and all spices. Using a fork whisk together and then add in water. Stir until a thick batter is formed.

  3. Add in the onion and sweet corn to the batter. Mix together until they are all evenly coated.

  4. Prepare the green sauce by adding everything to a food processor or blender.

  5. Meanwhile, To a deep skillet or non stick frying pan add enough oil to create a shallow layer. Allow the oil to heat up for a few minutes and then throw in a bit of batter to see if the oil is hot enough. If the oil starts to bubble it means its ready.

  6. Add 1-2 tbsp of mixture to the pan in one clump. Depending on the size of your pan add 3-4 bahjis at a time. Cook on each side for 2-3 minutes. Make sure that the banjis are cooked in the middle before removing from pan.

  7. Transfer the bahjis to a plate or tray lined with paper towels to soak up the excess oil.

  8. Serve with the green sauce and enjoy hot!
