Prep time: 10-15 minutes

Cook time: 15 minutes

Makes: 4 large burritos

Ingredients:

  • 1 can of jackfruit

  • 1 can of red kidney beans (or black beans)

  • 1 ripe mango, cut into small cubes

  • 1 pack of 4x Tortilla Wraps

  • 1 avocado, smashed

  • 1/2 red onion, diced

  • 1/2 capsicum, diced

  • 3 stalks of spring onion, sliced

  • 1 lime, juice

  • 1/2 tsp of garlic powder

  • 1/2 tsp of chilli powder

  • 1/2 tsp of paprika

  • Optional: Fresh Coriander

For the Satay Sauce:

  • 2-3 tbsp of peanut butter

  • 1 tbsp of soy sauce

  • 1 tsp of curry powder

  • 160ml of oat cream or coconut milk

  • 1/2 lime juice

Directions:

  1. Prepare mango salsa by cutting the mango, red onion, capsicum and spring onion. Add to a mixing bowl with 1/2 lime juice, olive oil and a pinch of salt.

  2. Smash the avocado and dress with the other half of the lime juice, salt and pepper to taste.

  3. Heat a non stick pan on medium heat with 1 tbsp of oil. Once hot add beans, garlic powder, chilli powder and paprika. Cook until beans are hot (about 6-7 minutes). Remove from heat and set aside.

  4. Prepare satay sauce by adding all ingredients to a bowl. Mix together with a fork until a smooth sauce is formed and set aside.

  5. Strain the jackfruit and add to a hot non stick pan over medium/high heat. After 2 minutes, use a wooden spoon to flatten the jackfruit - breaking it a part into smaller pieces. Add in satay sauce (and leave a small portion for garnish) Cook the jackfruit for another 5 minutes on medium low heat. Remove from heat and set aside.

  6. Assemble your burrito: Heat up your tortilla either on a non stick pan for a minute on each side or in the oven (if proffered). Add in jackfruit, mango salsa, beans, guac and coriander. Roll it up and enjoy!
